remembering the edge that is useful only comes after the softening in the fire. over and over again melting way the impurities.. the alchemy. Sending a huge hug in the grief. May you feel to heal.

I mean, what the fuk does Jamie Oliver know about making gravy? Good gawed, he puts jam in his gravy, and yet he's famous for it. Gravy is serious business. It can't be that white shit with a hint of Southern butter and sausage innit, cannit?

Do it fully vegan if you want, but at least learn what a fuking vegan gravy is before you spoon it on a fuking biscuit, am I right? It will take a week or two to make gravy, and another to learn good biscuits, even if you never even lived in the fuking South, I tell you.

My partner and I took a trip to Roswell from our home in Santa Fe recently. We were on a foodie mission -- to be at the Grand Opening of Tia Sophia's restaurant there. A long drive for huevos rancheros, agreed. But their chili is directly shipped from Heaven, so.

Anyway, the opening was postponed, so we went to a nearby other restaurant and we had huevos rancheros (of the Texas style -- hmm) and a shared side of biscuits and gravy.

At least it was called biscuits and gravy. The biscuit was excellent. The gravy was flavorless white sauce (mostly flour, I assume) and, well, lard. Or Crisco?

It was gag me "gravy". It was a weapon, not food.

Food needs to be taken seriously. Sigh.

Best huevos rancheros I ever had was in NM at a place call Rose’s but can’t remember the town. Best breakfast burrito was in Arroyo Seco above Taos, where my ma used to live.

I don’t like biscuits and gravy. I like biscuits but the gravy was never good no matter where I went.

Yeah, good gravy is difficult to find or make. It really is. And the dish called biscuits and gravy has generally been living in a rut which ruins it in most cases. Southerners too often don't know what a good gravy would be. Sigh.

I'm on a mission to make good turkey gravy at home, and then to make a good mushroom gravy... which may be either fully vegetarian or vegan. I'm not a vegetarian or vegan, but I respect 'em.

The only reason I hold onto "hope" -- of some sort -- these days ... is because I know I don't know much of anything in any "ultimate" sense. So anything is possible which is not a nightmare, too.

I wrote a comment but it disappeared. Grief mixed with the possibility of forgiveness, a strange sensation. Grief. Sometimes a blessing is mixed in.

I love your plan for the church pews. That seems born of an excited generosity to share what you are learning, and it to be part of or near your extraordinay garden . It rivals the grief.

which reminds me of my own defintion of Libra, that swinging wildly one way and then the other will eventually amd miraculously , turn into balance. Not that you are swining wildly, that was me once. upon a time.

I have been out of it for a long time, must catch up. I am very tired these days, and the news is doing me in.

Very interesting, this Temperance piece. Lots to think about.

Where can I get a real knish around here? Why does a good knish have so fuking many plain white potatoes, no peas and no ground turkey. Ever heard of salt and pepper and garden peas? Has Irish Sheppard's pie taught us nothing about a knish?
